Yummy Zucchini Chocolate Cake from Grandma
Grandma baked up her zucchini in a cake! Here is the new recipe she found: 1 3/4 c sugar (or Splenda); 1/2 c. canola oil, 2 large eggs, 2/3 c. unsweetened applesauce, 1 tsp. vanilla, 2 1/2 c. flour, 1/2 c. baking cocoa, 1 tsp. baking soda, 1/2 tsp. salt, 1/2 c. vanilla yogurt, 2 c. shredded zucchini, and TOPPING:1 c. of the miniature semisweet chocolate chips. OPTIONAL: you can all 1/2 c. chopped pecans, toasted.
Preheat oven 350. Spray a 13 x9 9 pan.
Mix all ingredients except topping. Begin with oil and sugar, beat in eggs and applesauce. Whisk dry ingredients together in another bowl, then fold in and add yogurt blending just until it is all mixed.
BAKE 20 min at 350. Then take out and add chocolate chips, then bake 10-15 min longer.
